Biryani Masala: What Goes In, and How Much

Chef Pasha
The short answer

A biryani masala is built on five things: whole garam masala, Kashmiri chili powder, turmeric, coriander powder and ginger garlic paste. For one kilo of meat, use 1 tablespoon whole garam masala, 2 teaspoons Kashmiri chili, 1 teaspoon turmeric, 1 tablespoon coriander and 2 tablespoons ginger garlic paste.

5Spices that do the work
1 kgMeat this quantity serves
2 tspKashmiri chili, for color

Key points

  • Kashmiri chili gives the color. Red chili powder gives the heat. They are not the same job.
  • Whole garam masala goes in early with the fat, ground goes in at the end.
  • Turmeric is a base note, not a flavor you should taste.
  • Ginger garlic paste belongs in the marinade, not the pot.
  • Salt the layers, not just the meat.

The quantities, for one kilo

This is the backbone for a chicken or mutton biryani that feeds six. Adjust the chili to taste, not the rest.

Spice For 1 kg meat When it goes in Why
Whole garam masala 1 tbsp With the hot fat, at the start The aromatics need time to move into the oil
Kashmiri chili powder 2 tsp With the tomatoes Color, without turning the dish hot
Red chili powder 1/2 to 1 tsp With the tomatoes This is the heat. Decide who is eating
Turmeric 1 tsp With the tomatoes Base note and color. More is not better
Coriander powder 1 tbsp With the tomatoes Body. It thickens and rounds the masala
Ginger garlic paste 2 tbsp In the yogurt marinade Tenderizes and seasons from the inside
Black pepper 1 tsp, cracked In the marinade Sharpness that survives the rice

Build your own, or buy a blend

Ready made biryani masala is one jar and one flavor. Building it yourself takes five minutes more and lets you move the dial.

Your own A ready blend
Control You set the heat and the color separately One fixed ratio for every dish
Freshness Whole spices, bloomed that day Ground months ago, usually
Cost per dish Lower, since the same jars cook everything else Higher, and the jar does one job
Effort Five minutes of measuring Open, spoon, done

If you cook biryani twice a year, buy a blend. If you cook it monthly, build it. The same five jars also cook your daily food.

The layering, briefly

Spices do half the work. The other half is the layering.

Par-cook the rice to about seventy percent. Layer meat, then rice, then the fried onions, herbs and a little of the marinade liquid. Seal and steam on low.

Salt each rice layer lightly. Unsalted rice over a well seasoned masala is the most common disappointment in a home biryani.

What goes wrong

Mistake What happens Fix
Using red chili for color Dish is fiery before it is red Kashmiri for color, red chili for heat
Ground garam masala early Aroma burns off Whole early, ground at the end
Fully cooked rice Mush after steaming Par-cook to about seventy percent
Wet marinade Rice turns sticky Drain the marinade before layering

Questions people ask

What spices are in biryani masala?
Garam masala spices such as cardamom, cloves, cinnamon and pepper, plus Kashmiri chili, turmeric and coriander. Ginger garlic paste goes in the marinade.
How much masala for 1 kg of chicken?
Roughly 1 tablespoon whole garam masala, 2 teaspoons Kashmiri chili, 1 teaspoon turmeric, 1 tablespoon coriander and 2 tablespoons ginger garlic paste.
Can I use garam masala instead of biryani masala?
Yes, with Kashmiri chili, turmeric and coriander alongside it. That combination is what most biryani blends are.
