Garam Masala vs Curry Powder: What Is the Difference?

Garam masala is a warm South Asian blend of whole spices such as cardamom, cloves, cinnamon, pepper and bay. It goes in near the end of cooking. Curry powder is a British creation built on turmeric, which makes it yellow, and it goes in early. They are not interchangeable.

The part that actually matters
Timing separates these two more than ingredients do.
Curry powder: early
It is a base. It needs heat and time.
Add it to hot oil with the onions. The raw edge cooks off and the turmeric colors the dish.
Added late, it tastes dusty.
Garam masala: late
It is a finish. Its aromatics are delicate and they burn off.
Add it in the last two to three minutes, or scatter it over the pot once the heat is off.
Added early, you lose most of what you paid for.
Can you substitute one for the other
Not cleanly. You can rescue a dish, but you will not match it.

Whole or ground
Whole spices hold their oils for months longer than a ground blend.
Bloom whole garam masala in ghee at the start of a biryani or pulao. The fragrance has time to move through the rice.
Or grind a spoonful fresh and add it at the end of a curry. Doing both in one dish is not a mistake.
